If "duck confit" is part of your vocabulary or if you dream of being on Top Chef, then you might want to check out the California Culinary Academy (CCA). One of the largest culinary schools in the US, CCA offers an Associate of Occupational Studies Degree in Le Cordon Bleu Culinary Arts, as well as a certificate program in professional baking and pastry arts. It also provides a program in hospitality and restaurant management. In addition to lecture halls and kitchen facilities, CCA's campus boasts public restaurants, a retail store, and a banquet hall. Career Education Corporation owns California Culinary Academy, which was founded in 1977 by Danielle Carlisle.

The California Culinary Academy (CCA) is an affiliate of Le Cordon Bleu, and is located in San Francisco, California. Founded in 1977, the academy has trained more than 15,000 people for restaurant careers through its 30-week baking and pastry chef program and 16-month culinary arts degree program. It was purchased by Career Education Corporation in 1999.[1]

Campus

California Culinary Academy's original location was 215 Fremont St. the second or North Campus, was located at 625 Polk Street in downtown San Francisco - this was actually the school's second location! The main campus is now in the Potrero Hill neighborhood of the city at 350 Rhode Island Street. The facilities include professional kitchens, student-staffed restaurants, lecture classrooms, a library and culinary laboratory.

Accreditation

California Culinary Academy is nationally accredited by the Accrediting Commission of Career Schools and Colleges of Technology (ACCSCT).[4] It does not have regional accreditation; thus, most regionally accredited or traditional universities and colleges are reluctant to accept its credits for transfer and many do not recognize its undergraduate degrees for entry into graduate programs.[5][6][7][8]

Controversy

California Culinary Academy was the subject of an unfavorable article in the San Francisco Weekly focusing on misrepresentations and omissions made to prospective students to enroll them in the school.[9] According to the Chronicle of Higher Education, in October 2007, a lawsuit has now been filed over this matter.[10]
