An edible, gelatinous, greenish substance lying beneath the upper shell of a turtle.

[Possibly alteration of Spanish carapacho, carapace.]


 
 

The green fat attached to the upper shell (carapace) of the turtle; the yellow fat attached to the lower shell is calipee.
