Recipe: Cucumber Soup

Ingredients

  • 1 Tablespoon vegetable oil
  • 1 pound pickling cucumbers (peel off skin, if waxed), chopped
  • 1 medium onion
  • 1 medium red bell pepper, chopped
  • 3 cups low sodium chicken broth
  • Ground pepper, to taste
  • Pinch of salt (optional)
  • ¼ cup plain, nonfat yogurt
  • 1 Tablespoon fresh parsley, chopped

Procedure

  1. In a large saucepan, warm the oil over medium heat.
  2. Add the cucumbers, onions, and red pepper.
  3. Cook until all the vegetables are tender, about 15 minutes.
  4. Stir in the chicken broth and simmer for 10 minutes, stirring occasionally.
  5. Remove from heat.
  6. In a blender or food processor, puree the soup until very smooth, and then return it to the saucepan.
  7. Bring to a simmer and season to taste with salt (optional) and pepper.
  8. Serve hot, topped with a Tablespoon of yogurt and a sprinkling of parsley.

Makes 4 servings.

Pickled cucumber soup, Polish style

The Cucumber soup is a soup based on cucumbers, known in various cuisines. The two major varieties are the fresh cucumber soup and pickled cucumber soup.

Fresh cucumber soups

Some fresh cucumber soups are just a blend of ingredients (cucumber, spices, other vegetables or fruits, etc.) served cold, others are cooked, possibly in some kind of broth, and served either hot or chilled.

Pickled cucumber soups

Poland

It is a traditional Polish soup (Polish: (Pl-zupa_ogórkowa.ogg Zupa ogórkowa sometimes simply ogórkowa). It is made out of sour, salted cucumbers and potatoes. Occasionally rice is substituted for the potatoes.
