Summary

Kendall College in Chicago is a private, co-educational college offering programs in hospitality management, culinary arts, business, psychology, and early childhood education.[1] Kendall College is accredited by the Higher Learning Commission and is a member of the North Central Association of Colleges and Schools.[2] The Culinary Arts Associate and Baking and Pastry Associate programs are accredited by the American Culinary Federation[3] Education Foundation Accrediting Commission. Kendall College is a subsidiary of Laureate Education[4], which operates an international network of accredited campus-based and online universities.

History

In 1934, two seminarians endorsed by the Scandinavian Conference of the Methodist Church —one Swedish, the other Danish-Norwegian—formed Evanston Collegiate Institute.[5] Many early students found employment at the Washington National Insurance Company of Evanston, a major financial supporter of the school.[6]

In 1950, the school was renamed in honor of Washington National’s founders, Curtis P. Kendall and his family.

Business programs at Kendall College began in the 1970s. The School of Business was created in 2007. In 1985, the School of Culinary Arts was established. Building on the culinary program, a Bachelor of Arts in Hotel and Restaurant Management was created in 1987. In 2005, the program was revised into a Bachelor of Arts in Hospitality Management. A partnership was later formed with Les Roches International School of Hotel Management and Glion Institute of Higher Education, including the creation of exchange programs with Les Roches campuses in Switzerland and Spain.[7] Kendall reintroduced its psychology program in 2009.

In 2005, Kendall College moved from Evanston, Ill., to its current location in the former Sara Lee Research and Development building.[8]

Academic Programs

School of Culinary Arts

Kendall College’s School of Culinary Arts was founded in 1985 in Evanston, Ill., by Dr. Albert Furbay. Today, Kendall’s School of Culinary Arts offers the following programs: B.A. in Culinary Arts; B.A. in Culinary Arts with a concentration in Culinary Nutrition; A.A.S. in Culinary Arts, with both standard and accelerated programs; A.A.S. in Baking and Pastry; and culinary certificate programs.

The School of Culinary Arts administration and faculty include: Dean Christopher Koetke, CEC, CCE, MBA, who has cooked professionally since 1982 in restaurants and pastry shops in the United States and Europe; Associate Dean Renee Zonka, certified as a registered dietitian by the American Dietetic Association; Mike Artlip, a 23-year veteran of Kendall and director of the culinary school, as well as manager of the student-run café; Melina Kelson-Podolsky, one of the very few Certified Master Bakers in the United States; Michel Coatrieux, a former cooking-school owner and now Kendall’s adjunct coordinator; and Peggy Ryan, former chef and owner of a three-star Italian restaurant in Evanston, Ill., who is the daytime executive chef of Kendall’s restaurant, The Dining Room, a Certified Green Restaurant®, where all culinary-arts students receive hands-on training.[9]

Distinctions: Dean Christopher Koetke was named Cooking Teacher of the Year by the International Association of Culinary Professionals in 2009[10]. Kendall College won the Academy of the Culinary Arts Cordon d’ Or – Gold Ribbon Cooking School of the Year Culinary Academy Award for 2008.[11]. Kendall College was the first institution with an accredited culinary-arts program to operate a Certified Green Restaurant®[12]. In 2008, Kendall’s public restaurant, The Dining Room, was honored with an Achievement of Excellence Award from the American Culinary Federation.[13] Kendall received the first Green Award earned by a culinary-arts program from the Foodservice Consultants Society International in 2007.[14] Distinguished as an “Exemplary Program” by the American Culinary Federation Education Foundation Accrediting Commission [15]. Kendall was named an official educational partner of the National Restaurant Association Conserve Environmental Initiative in 2009.[16]

School of Hospitality Management

In 1987, Kendall College launched a Bachelor of Arts degree in Hotel and Restaurant Management. The program focus was broadened in 2005 when it was revised into a Bachelor of Arts in Hospitality Management. The program then formed a strategic partnership with Les Roches International School of Hotel Management and the Glion Institute of Higher Education.[7]

Kendall College’s School of Hospitality Management is partnered with the Les Roches International School of Hotel Management in Switzerland, ranked one of the top three international hospitality management schools in the world for an international career.[17]

The curriculum emphasizes the skills and capabilities needed for leadership positions in large hotel operations, food service establishments, and meeting venues. The academic program includes a rigorous business and management knowledge found in traditional universities, as well as coursework particular to the seven concentrations offered in different areas of hospitality.[18]

School of Business

Kendall College’s School of Business was launched in 2007. The school offers a Bachelor of Arts in Business with five concentrations that include Management, Food Service Management, Professional Cookery, Baking & Pastry, and Personal Chef & Catering.

School of Business faculty includes: Bruce Bloom, Sascha Cocron, Tron Fu, Mike Harley, Dan Heck, David Long, Leonard B. McKendrick, Albana Pepaj, Aurora Dawn Reinke, Amy Rubinstein, and Dan Westin[19].

Psychology Program

Kendall College began offering a Bachelor of Arts in Psychology within the Kendall College School of Business in 2009. Students can select a concentration in Advanced Studies in Psychology, Organizational Psychology, or Human Resources Management. The program offers traditional courses, such as Social Psychology and Abnormal Psychology, and also focuses on professional development courses, such as Leadership and Group Dynamics, Psychology of Business and Industry, and Professional Development.[20]

School of Early Childhood Education

Kendall College’s School of Early Childhood Education offers two degrees and one certificate program: Bachelor of Arts in Early Childhood Education, certification track, with Illinois Type 04 Certification Preparation; Bachelor of Arts in Early Childhood Education, non-certification track; and Post-Baccalaureate Illinois Type 04 Certification Preparation, for students who have already earned a B.A. or a B.S.[21]

Laureate Education

Kendall College is a subsidiary of Laureate Education, which operates an international network of accredited campus-based and online universities.

Accreditation

Kendall College is accredited by the Higher Learning Commission[22] and is a member of the North Central Association of Colleges and Schools[23]. The Culinary Arts Associate and Baking and Pastry Associate programs are accredited by the American Culinary Federation Education Foundation Accrediting Commission[24]. Kendall’s School of Education is approved by the Illinois State Board of Education[25] for its certification preparation program that leads to Illinois Type 04 Teacher Certification.
