Macadamia Nut Cookies
Recipe origin: Australia Aborigines and Bush Tucker
Ingredients
- ½ cup butter or margarine
- ½ cup shortening
- ½ teaspoon baking soda
- 2½ cups powdered sugar
- 2½ cups flour
- ¼ teaspoon salt
- 2 eggs
- 1 cup macadamia nuts, chopped and roasted
Procedure
- Preheat oven to 350°F.
- Combine baking soda, powdered sugar, flour, and salt in a bowl.
- In a separate bowl, mix the butter, shortening, and eggs until smooth.
- Combine and mix together all ingredients into one bowl. Add nuts.
- Drop teaspoons of dough about 2 inches apart on an ungreased cookie sheet.
- Bake for 10 to 12 minutes.
Makes 3 to 4 dozen cookies.
