P. F. Chang's China Bistro, Inc. (NASDAQPFCB) is an American restaurant chain founded in Scottsdale, Arizona in 1993 by Paul Fleming. The restaurants serve American Chinese cuisine from a menu originally conceived and planned by chef Philip Chiang. P. F. Chang's is the namesake of Paul Fleming (P. F.) and Philip Chiang (whose surname is simplified to Chang.)

P. F. Chang's operates exclusively in the United States; As of December 2005, PFCCB Administration, Inc. maintains 133 restaurants in 34 states. P.F. Chang's corporate headquarters is in Phoenix, Arizona. P. F. Chang's China Bistro, Inc. is the parent company of Pei Wei Asian Diner, a casual, pan-Asian restaurant chain in the United States.

P. F. Chang's is one of a few restaurant chains that offers a dedicated menu to diners that must follow a strict gluten-free diet. The company has been recognized for this by the Gluten Intolerance Group of North America.[1]

The company, along with MBH Architects, has received several architectural awards for restaurant designs.[citation needed] These include its locations in Seattle, Washington; Las Vegas, Nevada; Fort Worth and San Antonio, Texas; and Walnut Creek, Rancho Mirage, San Jose, Palo Alto and Long Beach, California.

The restaurant chain is frequently referenced in the animated sitcom South Park. Laura Cherry, a spokesperson for the chain, has spoken positively of the series, and stated that creators Trey Parker and Matt Stone frequently dine there.[2]
