Palak Bhaji

(Spicy Fried Spinach)

Ingredients

  • 1 pound fresh spinach
  • 1 Tablespoon butter
  • 1 Tablespoon vegetable oil
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon ginger, finely chopped or grated
  • 1 teaspoon cumin seeds
  • ½ teaspoon cumin, ground
  • ½ teaspoon coriander, ground
  • ½ teaspoon turmeric, ground
  • ¼ teaspoon chili powder
  • 1 teaspoon salt

Procedure

  1. Wash the spinach well and remove stems.
  2. Finely chop the onion, garlic, and ginger.
  3. Heat the oil and butter in a saucepan over medium to high heat.
  4. Add the cumin seeds and fry for 30 seconds.
  5. Add the chopped onion and fry until golden, about 2 minutes.
  6. Next add the chopped garlic and ginger and fry for about 1 more minute.
  7. Add the ground cumin, coriander, turmeric, chili powder, and salt; mix well and add the spinach.
  8. Mix rapidly to coat with spicy mixture.
  9. Lower the heat to medium and add about ¼ cup water.
  10. Stir, cover with lid, and cook for about 5 minutes.

Serves 4-6.
