[reh-CHAW-toh dee SWAH-veh] A sweet wine made using the passito process whereby grapes are dried to concentrate the sugar and flavors. Made primarily from garganega with smaller amounts of chardonnay, Pinot Bianco (pinot blanc), and/or trebbiano grapes, in the same designated area as soave doc wines, Recioto di Soave can be an excellent abboccato (lightly sweet) wine, with more richness and lushness than most Soave wines. It can be found in spumante and liquoroso styles as well. In 1992 Recioto di Soave was upgraded to docg status, the first zone in the veneto region to be upgraded to Italy's highest quality category.
