Recipe origin: Islands of the Pacific
Ingredients
- 4- or 5-pound lean pork roast, boned
- ½ cup brown sugar
- ½ cup soy sauce
- 2 Tablespoons dark molasses
- 1 teaspoon garlic powder
- 1 cup water
- Salt and pepper, to taste
Procedure
- Place pork roast in roasting pan or baking pan, and set aside.
- In a small mixing bowl, mix brown sugar, soy sauce, molasses, garlic, water, and salt and pepper.
- Pour mixture over meat and refrigerate. Let the meat marinate (soak) in the liquid for 4 hours, turning it occasionally.
- Preheat oven to 450°F.
- Roast the pork for 15 minutes, then reduce heat to 325°F.
- Roast for another 2½ to 3 hours, or until well done. Baste often. (To baste, pour the pan juices over the meat with a spoon or basting syringe.)
- Carve into slices and serve with Bananas and Sweet Potatoes (recipe follows) or other side dish.
Serves 8 to 10.
