[sohs-see-NYAHK] A small sweet-wine appellation located in France's bergerac area, east of the city of Bordeaux. The wines are made primarily from sémillon along with some muscadelle and sauvignon blanc grapes that have either been partially raisined or infected with botrytis cinerea (noble rot). The botrytis- infected grapes have the concentrated sweetness and flavor necessary for the best dessert wines. In good years, Saussignac wines can assume the character of a sauternes, although usually not with the same richness and finesse.
