Shkembe chorba (Cyrillic: Шкембе чорба) is kind of tripe soup. It contains cattle stomach and it is a traditional Albanian, Bulgarian and Romanian dish. Similar soups are also prepared in Serbia, Greece (called Patsas), the Republic of Macedonia, Croatia, Poland, Hungary, the Czech Republic, Slovakia, Romania, ("ciorbă de burtă") and Turkey as İşkembe çorbası, hence the name.

Tripe is the thick lining of the stomach of cattle, well cleaned for human consumption. Shkembe chorba is made with milk; garlic, vinegar, and chili peppers are often added as seasoning. Different versions of the soup are quite common in the eating places all over Eastern Europe and the Balkans.

Another different type of tripe soup common in Czech Republic is drstkova polevka (dršťková polévka) and in Slovakia is drskova polievka (drskova polievka). It is also well known as a hangover remedy.

According to popular belief and based on anecdotal evidence, shkembe chorba alleviates hangovers if consumed after drinking. This may be due to the combination of liquid, salt, vinegar, and fats like milk and sunflower oil used in the preparation, which are known to reduce gastrointestinal discomfort associated with hangovers.
