Spinach with Garlic

Recipe origin: Egypt

Ingredients

  • 1 medium onion, chopped
  • 1 Tablespoon vegetable oil
  • 2 garlic cloves, chopped
  • 1 can (15-ounce) tomato sauce
  • 10 ounces frozen spinach, thawed
  • ½ cup water
  • 2 cups cooked rice

Procedure

  1. Heat oil in a large skillet.
  2. Add onions and cook, stirring with a wooden spoon, until onions are softened.
  3. Add the garlic and continue to cook for 2 minutes.
  4. Add the tomato sauce and bring to a boil.
  5. Simmer for 10 minutes on low heat.
  6. Add the spinach and water, and heat to a boil again.
  7. Cover and simmer on low heat for 15 minutes.
  8. Serve warm over cooked rice.

Serves 4.
