Mostly mixtures of esters, e.g. banana oil is ethyl butyrate and amyl acetate; apple oil, ethyl butyrate, ethyl valerianate, ethyl salicylate, amyl butyrate, glycerol, chloroform, and alcohol; pineapple oil is ethyl and amyl butyrates, acetaldehyde, chloroform, glycerol, and alcohol.
