Wine Lover's Companion: transfer method

A method of making sparkling wine that's similar to méthode champenoise. The major difference is that-instead of the riddling and disgorgement steps-the wine, after a second fermentation in the bottle, is transferred to a pressurized tank where it passes through a filtration system to remove sediment. Sparkling wines made this way may be labeled "bottle fermented," "fermented in the bottle," or "transfer method."
