What is umami?

 

Umami, a new taste described by the Japanese, is elicited by the amino acid glutamate, which appears to be responsible for the "beef taste" of steak, the tang of aging cheese, and the flavor of MSG, the food additive monosodium glutamate. The umami receptors are located in the pharynx.
