Many people believe that one needs ground horseradish for the bitter herb. The Talmud, though, lists a number of vegetables in descending order of preference. The most preferable of all vegetables for use as the bitter herb is, according to the Talmud, romaine lettuce, which has a slightly bitter taste. Romaine lettuce is definitely preferable for a number of reasons: a) the amount one must eat is a fluid ounce within the space of a few minutes, an unbelievably large amount in the case of horseradish, considering its pungency; b) that quantity of ground horseradish can present a real health hazard (although it will do wonders for the sinuses!). In fact, any person who is in poor health who plans to use horseradish should first check with a doctor.
