If you are going to go for broke in Aix, everyone recommends Le Clos de la Violette (10 Avenue de la Violette, 13100 Aix en Provence,33 04 42 23 30 71, fax 33 04 42 21 93 03, www.si-web.net/closdelaviolette/english.asp, €€€€), which has two Michelin stars and “crossed forks” all over the place. Spread across several rooms, it might offer parsnip ravioli, wild asparagus with poached eggs and morels, sea bass, pear soufflé or savory tarts dressed with balsamic vinegar. Also in the stratospheric class is the Hotel Passédat-Petit Nice in Marseille, another two-star establishment where Gérard Passédat, one of France’s world-renowned chefs, cooks innovative seafood.

Of course, its possible to dine well for considerably less. Look for restaurants specializing in regional Provençal cooking and, particularly along the Mediterranean, seafood and you can hardly go wrong. In Aix, Café Bastide du Cours (43-47 Cours Mirabeau, 13100 Aix en Provence,33 04 42 26 55 41, fax 33 04 42 93 07 65, info@cafebastideducours.com, €€€) offers seafood, duck and lamb and an extravagant dessert menu that includes baked red fruit in batter with mousse and a terrific chocolate cake.

Cassis is full of charming, small restaurants and bistros overlooking its various beaches and the fishing port. Fleurs de Thym (5 Rue Lamartine, 13260 Cassis,33 04 42 01 23 03. Open for dinner only, between October 1 and March 1, €€-€€€), serves traditional Provençal dishes and seafood in the colorful local décor of tiles and printed fabrics. Restaurant Romano (Port de Cassis,33 04 42 01 08 16, €€) is a marine bistro with a terrace overlooking the tiny fishing port, specialising in bouillabaisse or fisherman’s casserole. Nino (1 Quai Jean Jacques Barthélemy, Port de Cassis,33 04 42 01 74 32, €€€) is yet another restaurant where you can enjoy bouillabaisse overlooking the old port – this time in front of a house built in 1432.
