You'll need to pull the engine, which means you'll need an engine lift. Beyond that, you probably have enough tools. Make sure you replace the clutch plate, pressure plate and throwout bearing and make sure you have the flywheel resurfaced. While the engine is out, replace the rear main seal if you can get to it.

What is a function of the clutch in the vehicle?

The purpose of a clutch on a vehicle is to disconnect the drive of the engine from the gearbox (this would be required when the vehicle is stationary or to change gear). While the engine is running the crankshaft is continually turning, It is the crankshaft that turns the gearbox and via the gearbox the road wheels. Obviously there are times when the engine is running but drive is not required, The clutch is the mechanism by which this is achieved.

Where does the clutch fluied go on a 74 vw bug?

Unless someone has done a custom hydraulic clutch setup on this vehicle- there is no clutch fluid. It is a cable clutch linkage on a stock vehicle. If it has been customized there will be a easily identifiable reservoir connected to the clutch pedal or connected to the clutch master cylinder by a hose.
