Mice can be cannibalistic if given the right circumstances. Anyone that breeds mice will attest to the fact that mothers will not hesitate to cannibalize their babies if they believe they are in danger of some sort. This is both to regain some of the energy lost by having the babies (and if she believes they are going to be eaten by a predator otherwise, giving them a quick death.)

But in most cases if you find parts of your rat it means that one rat died and the rat/rats ate their corpse

Well I'm not 100% sure on this one but a friend of mine put her mouse in with her brothers one night and by the morning her mouse was missing and her brothers mouse was almost twice its usual size.
