It will depend on what they were made from and how/if they were wrapped up. Cake and bread go stale if left unwrapped on the counter, but can still be eaten for several days. Pancakes are pretty much the same.

∙ 10y agoIt is very dangerous to eat two day old unrefrigerated pancakes because at that point they have started to go bad and can get you very sick.
