Still would of been Mount Everest, even though it had not been discovered it was still there. Before it was named in 1856 by Andrew Waugh, the then British Surveyor General of India and its height of 29002 ft. first published by the Great Trigonometric Survey of India, Mount Everest happened to be the tallest mountain on the surface of the Earth.
Prior to its naming after the erstwhile Surveyor General, George Everest, it was simply known and referred to as Peak XV.

Mount Everest was the highest mountain regardless of whether it was discovered or not. Due to tectonic movements, Mount Everest was growing since the dawn of humanity some 2-4 million years ago. Before that it is possible that Everest wasn't the highest mountain, but since there aren't any records stating height of mountains, then we could technically say that Everest has always been the highest mountain regardless of whether humans or their descendants named a higher mountain.
