First, a coordinate bond IS a covalent bond, but one in which both electrons are provided by one element. In nitrogen monoxide (NO), there is a double bond between N and O, such as in N=O and each element contributes 2 electrons to this, so it would be considered a coordinate bond.
Sodium and nitrogen typically form an ionic bond where sodium loses an electron to become a cation, and nitrogen gains an electron to become an anion. This results in the formation of an ionic compound, such as sodium nitride (Na3N).

Nitrogen is an absolutely essential part of amino acid structure, which makes up protein. Organisms are essentially "made" of protein, that is, the structure and function of their bodies is thanks to proteins. Nitrogen also has many other uses in the body such as the synthesis of non-protein nitrogen products (Nitric oxide, a vasodilator, and GABA, a neurotransmitter just to name a few.)
