In my 1997 Explorer XLT (4 x 4), I had a problem with the transfer case, it was engaged all the time and too expensive to replace, I never used it, he took the small axle out, the one that goes from the transfer case to the front differential. he advised me that the "Check engine" light will keep lit as the sensor is doing it´s job. Can a 1994 sierra z71 transfer case be removed and replaced with a drive shaft to become a 4x2?

YES. But you will have to get a 2-wheel drive 4L60E transmission to replace the 4-wheel drive transmission. Reason is that the center shaft that's running through the 4x4 transmission is longer so the transfer case will slide up on it. The 2-wheel drive center shaft is shorter cause there is no need for a transfer case.
