There is no need to freeze oils, but it is an option. The problem is that saturated oils like peanut oil harden so quickly that if you freeze them, they will be hard to utilize in a pinch. Also, most oils are (rightly) stored in glass, and this glass will not be tempered for extreme hot or cold temperatures. So, your oil jar may crack. To your preservation point, though, oils do respond well to dark locations and to cool temperatures. If you want the peanut oil to last as long as possible, refrigerate it. In a dark cabinet with reasonably constant temperature, though, your oil will be fine for several months. If it begins to smell musty or not nutty anymore, it will no longer perform or taste as a fresh oil.
