A bit of apple cider vinegar in a diet is a good idea. It adds flavor and a "snap" to things. But it should be used in moderation; you don't want to drink this stuff. It will dehydrate you, and can make you sick if you drink enough of it. A little bit is good, though. We use vinegar in different foods all the time, and you see it most commonly in salad dressings and in entrees like sweet and sour foods.
Ironically enough, apple cider vinegar can help with acid reflux. Acid reflux occurs when the stomach produces some acid, but not as much as it should and not enough to trigger the esophageal sphincter to close. If the sphincter doesn't close, then as the stomach churns food, acid gets thrown into the sensitive esophagus. A little bit of apple cider vinegar will increase the acidity, triggering the sphincter to close, and it will improve digestion by bringing the acid level back up to a healthy level.
Only if you want a really bad gas problem in your stomach!
