Yes. As long as you can get a pastor to do the ceremony, as they are generally busy on Sundays. You may have to be more flexible on the time. Getting married during a regular Sunday worship service is also possible, but most people don't.

A priest can marry someone at anytime. Be it 2:35 Sunday morning or 10:30 Friday evening. Of course it is more likely that a marriage will be on a Saturday.

of course a priest can perform a wedding on Sunday. You just dont see it very often because half the day is spent on the weekly mass
