Cut the potatoes into the desired shape (the standard width and shape is called a French cut, and thus cutting them into these shapes is called frenching), obviously after washing and peeling them, add some salt to it (you can also add pepper and other spices according to your taste) and mix it nicely. Drain them if there is any water. Now dry the potatoes, preferably under a fan, for about 15-20 minutes as you don't want water to freeze with the potatoes. Now put them in a freezer for some time (maximum 8-10 days).

You can, but you would need a sheet pan to lay them on. Because once frozen french fries have thawed and get put back in the freezer they will clump together. When French fries are processed (IQF) individually quickly frozen, so that they can be placed together once they are frozen and wont clump together.
i wouldn't recommend it. Too much water in them and they splatter like mad. Cut from fresh peeled potatoes, make sure they are dry, toss in non terry dish towel , heat oil in pan that is deep enough. Fry in oil, until golden , drain on paper towels.
You can put them in a plastic freezer bag or container and put them in the freezer. They will last longer if you can vacuum seal them first.

I think most companies use either dextrin or maltodextrin in their frozen fries. This is what helps the potatoes retain their color and brown nicely when they cook. Hope this helps.
