Personally I wouldn't. Parsley works great with fish dishes where cilantro (or coriander) has a flavour best suited to dishes which contain spices, such as Indian and Mexican food.

Parsley is quite mild as far as herbs go. On the other hand, Cilantro has bite and is quite peppery. Both are very good for you, as they are both high in chlorophyll. Parsley is also typically used as a garnish and to add color. Try it and see what happens. You may be pleasantly surprised with the results.
Cilantro is coriander, to use this to replace a green vegetable would be a little strange.

While cilantro and parsley are different herbs, many different sources indicate that cilantro can be used as a substitute for parsley. Those same sources indicate that chervil is the best substitute; so, if you have any chervil, you might want to use that instead. The measurements appear to be the same. In other words, if your recipe calls for 1 tsp. of parsley, you would use 1 tsp. of cilantro or 1 tsp. of chervil.
Marinade the kale leaves in the dressing you intend to use on them. The oil, NOT the acid, is actually what softens the Kale.
You can use other greens, such as Swiss chard, collards, or spinach. But be aware that the different greens may take different times to cook, because some of them have a tougher leaf that takes longer to get soft. Spinach cooks the fastest, then chard, then kale, then collards. It may not matter, depending on what you're making.

If the recipe calls for coriander seeds, cumin and caraway seeds are good substitutes. If the leaves of coriander is what is required for the recipe, this is also known as cilantro. In this case, fresh parsley can be used as a substitute.
