I just hate the potato chips. You should eat the same only, if there is nothing else is available to eat. Potatoes do not contain much of the vitamins, except in the peels of potatoes. So only part, that can be eaten in the potatoes is peels of the potatoes. Potatoes contains very less amount of proteins. It contains very high percentage of carbohydrates. Frying the potatoes add to the misery. I always gave lecture to my students about not eating the potato chips. But they, specially the girl students used to eat the same only, just in front of me!

Potatoes are part of a healthy diet. Cooking them with the skins on tends to make them better for you. The only difference in a blue (the correct term for a purple potato) potato is the flavour. Having grown up eating both the Blue skinned and the totally blue potatoes, I can say I am very fond of the flavour, as are any of the people I have introduced to them.

It is not unhealthy to eat boiled potatoes, but it would be unhealthy to rely only on boiled potatoes for your nutrition, since they will provide you with no vitamin C, A, or D, and very little protein, so you really need a more varied diet. Anyone trying to survive on boiled potatoes alone would eventually succumb to scurvy.
