It depends on the recipe. If the recipe requires a large proportion of vegetable oil and you're hoping to substitute it with coconut oil it is not a good idea since coconut oil has a distinctive taste which will overpower the whole dish.

No, both are entirely different by nature. And both gives completely different taste, smell, flavour when applied in any dish or preparation. For example take the case of mayonnaise. which if prepared by olive oil tasted great. but tastes funny and odourful if prepared with coconut oil.

same way, taking the case of any Indian dish. In the flavour and aroma of any Indian dish, coconut oil has a major role to play. You can't achieve that taste with olive oil or any other oil.
