Provolone or monterey jack (not pepper jack) cheese can be sufficient substitutes for mozzarella.
If it will be heated, you can substitute Swiss. If not, parmesan cheese.
Fontina has a very distinct taste and aroma. If you are not too fussy you could possibly substitute Parmesan, but not Mozzarella. Mozzarella is far to bland and soft to replace Fontanella.
