Most substances have a specific temperature at which the solid will melt into a liquid, which is known as the melting point, as well as a specific temperature at which the liquid will boil and turn into a gas. The most familiar example is water, which has a melting point of 0 degrees Celsius (or 32 degrees Fahrenheit) and which has a boiling point of 100 degrees Celsius (or 212 degrees Fahrenheit). It should be noted for the sake of completeness that there are some substances which do not go through all three phases, of solid, liquid, and gas, at normal air pressure; for example, frozen carbon dioxide does not have a liquid phase at normal pressure, and when heated it turns into a gas, rather than a liquid (a process known as "sublimation").
