Well they were travelling the mundane british countryside searching for horcruxes during the time they would have been studying for newts. However I imagine they will have gone on to study NEWT level after the defeat of voldemort in order to get decent jobs. But I am not 100% sure.
It has been said that Hermione was the only student in her year to finish 7th year so i think she did.

After the Battle of Hogwarts, Ron goes to work at Weasley's Wizard Wheezes for a time, then pursues a career as an Auror with Harry.
Well, Hermione first goes back to Hogwarts after the final battle to complete her NEWTs. (Only one in the trio to do so.) Afterwards, she ends up in the Ministry of Magic in the Regulation of Magical Creatures Department. Hope that helps! :-)
