There is a term called "association" in which an animal associates different words you say with different things. For example, I have a dog (dalmation) which is a breed that is known not to be too much on the bright side. She understands a lot of what I say to her as I say the all of the time to her. If I say "walkies" she gets very excited, knowing that she is going to go for a walk. If she is outside and I need her to have a wee I will say "have a wee" and she will actually have one unless she really doesn't need one. All dogs can do different tricks aswell such as sitting, lying down, paw etc, so when you ask the dog to do this and they do it then they obviously understand what you are saying. Other animals probably couldn't understand what you say, but dogs are very clever animals so there's your answer.

Basically it all depends if you were to train the animal to do so then there is a good chance that it can understand what you are saying. For an example, dogs do not understand humans but they do understand body language so if you were to teach them a simple command like sit then i guess they can understand you but through body language it all just takes time and patience.
