It can change the texture, color, softening, aroma and flavor in a plant as well. Bananas release more ethylene than other fruits, so they ripen faster.

Putting any kind of fruit in a paper bag will ripen it faster. (The bag does not necessarily need be brown, as you may think from many sources, that simply copy each other)

The reason paper bags work well is because they are porous, rather than plastic bags that do not allow air to them, causing them to rot far quicker than ripen.

They're less exposed to the elements of air, sunlight, temperature, and physical bruising. keeping them cold in the freezer or fridge slows down the rotting. Molecules move slower when cold, and processes like fruit rotting slow when put on ice.
