Chickens will eat flies if they can catch them. It isn't a good idea to allow large amounts of flies to gather around a chicken coop though, because they can spread disease to the flock. It is best to take measures to keep fly populations down.

They don't. They're too heavy for their wing size to be able to fly. At most they can flap and jump a bit.
