Not all optical illusions use colours, for example some use black and white (which are technically shades, to be pedantic). And also the reason that optical illusions mainly use colour is because the main function of the eyes is that they can detect colours, namely red, green and blue. Everything you see is some part red, green and blue (unless, of course, it is a perfect red, green or blue in which case it is just that colour), and different parts of the optic nerve can detect different frequencies and wavelengths of light. But not to over-complicate things, I wouldn't say that most optical illusions involve colour, but if they do it's because they often cause us to test our perceptual reality. An example of this is that when the same colour is shown against a dark background and a light background, the colour will appear different against each background.
