Killing and/or eating lamb during passover is actually not done by Ashkenazi Jewish custom. Many Sephardim do eat lamb during Passover with some Ashkenazi Jews starting to eat lamb too.

After Pharaoh refused to let the people of Israel go even after nine plagues, Moses informed Pharaoh that God would kill all Egyptian firstborns. The people of Israel were told to kill a lamb and put its blood on their doorpost. God "passed over" the houses with blood on the doorposts when killing firstborns. That night Pharaoh finally allowed (actually commanded) the people of Israel to leave Egypt. This freedom from slavery in order to serve God is celebrated by Jews every year, and has also been an inspiration for other people.
While today, many Jews don't eat lamb on Passover, the idea came from the original Passover event in Egypt. Lamb was an offering of thanks that was eaten by the family that made the offering during Passover. Many Ashkenazi Jews won't eat lamb because we don't have the Temple at this time. Most Sephardim don't have any restrictions on eating lamb during Passover.
