Wild turkeys are excellent fliers and often roost in trees at night to protect themselves from predators. Commercial turkeys (the white ones that are raised and harvested for you to buy at the grocery store) are poor fliers due to selective breeding that has increased the muscle mass of the chest muscles - the birds, when mature, are almost too heavy to fly.

typically, domesticated turkeys are raised for consumption, therefore must be the right size to eat. generally speaking, they have to be very fat, and are fed very fattening foods. they weaken and fatten, eventually being rendered incapable of lifting their own weight to the point of flight.
