No. On-base percentage is calculated by adding hits, walks and hit-by-pitches and dividing that number by the sum of all at-bats, walks, hit-by-pitches and sacrifice flies. (Source: www.homerunweb.com/onbase.html)

A fielder's choice does not improve a player's batting average, and neither does an error.

Actually an error counts towards your on base percentage, just not your average. Does a fielder's choice count towards your obp.

No. Reaching base via catcher's interference does not result in an official plate appearance nor a time on base when calculating on base percentage.

What fielding records are kept on a catcher?

Fielding stats kept on catchers include putouts, assists, errors, double plays, passed balls, catcher's interference, percentage of base stealers thrown out, number of bases stolen against, number of base stealers thrown out. The combined ERA of all pitchers while they are throwing to a particular catcher is also calculated, but this stat is not widely publicized.

Is it catcher interference if the batter fouls the ball and then hits the catchers glove on the follow through of the swing?

Yes, interference will be called if the umpire judges the catcher hindered the batter. If the ball is hit and the batter runner successfully reaches first and runners forced to advance or were stealing a base advanced the interference is ignored. If the batter runner is thrown out the manager has the option to accept the outcome of the play or accept the interference call placing the batter runner on first. If other runners are on base the manager's choice will affect them too. Accepting an interference call would require non-forced runners to return to their base. Consider a runner on third with no or one out when interference occurs. The batter runner is thrown out while the runner on third scores. Accepting the interference would require the runner scoring from third to return to third.
