I use a handheld vacuum to suck them off the plant. That way I don't have to touch them. Also, it's a lot easier to catch them than if you're using your hands, and it happens so fast that they don't know what hit them, so there is no stink. I use this method for pretty much all bugs and beetles in my vegetable garden. I empty my vacuum trap into a big bowl of soapy water to get rid of any bugs I have caught.

Yes and in some cases no. It depends on how they died too. For instance, if a spider kills them, they will spray the spider before they die.

No, this is true of some insects, but not stink bugs. They just smell foul when they are crushed, hence the name.
