No, they don't fight pathogens, they just transport oxygen around the body. It is the white blood cells called neutrophils and monocytes which are involved in phagocytosis, and thereby fighting pathogens.

Red blood cells (RBCs) develop in the bone marrow. The biggest difference between an immature RBC and a mature one is that the immature RBC still has a nucleus, and a mature RBC has lost its nucleus. The nucleus is lost in the final stage of RBC development (when the cell is called a reticulocyte, right before it becomes a mature RBC). If you do a blood smear of a normal person, you should see no nucleated (ie immature) RBCs. If you do a blood smear of a person with hemolytic anemia (someone who is low on RBCs because of disease), you will see lots of nucleated RBCs. This is because the body is trying to compensate for the low RBC count and is so desperate it is sending RBCs into circulation before they are even fully mature.
