When you attack him after he is stunned, I recommend doing a jump attack with a Deku Stick. It will use up a lot of your Deku Sticks, but it is well worth it, as the Deku Sticks to twice as much damage as your sword, and a jump attack does twice as much damage as a regular attack, so if you use this method, you can defeat him insanely quickly! :)

When you get to the main menu you select the crown that is labeled kong battle, two selections will appear; a battle arena, and a normal kong match.
