Mascarpone cheese is a very rich, creamy (triple cream) cow's milk cheese containing about 75 percent milk fat. Mascarpone can substitute for cream cheese in many recipes. It can be used to finish risotto, and to top hot or iced coffee or chocolate. It is used widely in Italian sweet and savoury cooking, and as a spread. Mixed with anchovies and mustard it is delicious served with grissini, the Italian breadsticks. Mashed with potatoes, it makes an attractive side dish, and with a combination of other cheeses (mozzarella, Parmesan, and so on) mixed with eggs, parsley, oregano and pepper, it is used to fill canneloni or manicotti, which is then baked with passata (crushed and sieved Italian tomatoes) and mozzarella or Parmesan topping.

Pizza is the most popular Italian food in the US. The pizza we buy, although delicious, is not at all like its Italian cousin. The taste, too, is different; Italian pizza tastes much fresher.
