The scientific answer to this is that there ahas not bee a substantial amount of evidence presented that diet affects Arthritis. aside from the disease Gout in which foods that are high in purines have to be avoided.

There has been no connection found so far between diet and Rheumatoid arthritis. However there are a lot of people with this disease that claim their diet does make a difference. In the majority of these case the foods that need to be avoided often turn out to be things that are acidy such as certain fruits and red wines particularly fortified wines like port. In My experience I was under the impression that I had a bad reaction to port and, Mangoes and apples for a while but now I don't seem to have any problems with it. I suspect that there may be a connection but that it all depends on the individual.

aside from having to avoid purine rich foods in the case of Gouty arthritis there is no definite evidence that there is any particular food that causes arthritis. There are over a hundred different forms of arthritis .

There is no specific evidence that there is any connection between diet and arthritis (aside fro gouty arthritis) There does however seem to be some anecdotal evidence that particular individuals can have allergy's to certain foods. in these cases the way to find an answer is trial and error as the allergy's are different for different people. In the case of gouty arthritis there are gguides available that sugest low purine diets. purines are what is metabolized into uric acid , the cause of the symptoms of gout.

There is really no definite evidence that you need avoid any foods if you have arthritis. Unless you have Gouty athritis and in that case seafood, offal foods red meat and legumes need to be limited.

Aside from getting a bad reaction from vegetable high in purine in the case of gout the vegetables you eat have no bearing on arthritis
