Depends if you are building heavy bass system with quite a few subs then a mono amp would be suggested but if it is just a single sub just for a standard bass upgrade then a 2 channel amp would be fine you can still use a mono amp on one sub
just remember to take into perspective the RMS rating and the Impedance on both the Subs and the Amp

You won't notice any stereo separation with two subwoofers because our ears perceive bass as omnidirectional. Two subs can make more volume than one of the same size. If you are using two subs, you should either use two separate mono amps, or a two channel setup. As long as the amps have a high pass filter they will work equally well, although the wiring will be simpler for the two Chanel setup.
Yes, the L-7s are great. For the amp, you first need to find out whether the sub woofers are 2-ohm, 4-ohm, or 8-ohm. Depending on the answer to that question will determine whether or not you'll need a mono amp or a dual channel amp as well as the wattage.
You could with a 4 channel amp. Bridge it to two channels and hook up the two 8 ohm woofers in parallel on the one bridged channel. Then hook the two coils on the dual coil woofer in series with the other bridged channel on the amp.

this monoblock amp is bridged internally. It can handle a minimum of 350w RMS one channel and a maximum of 700. I'd suggest letting a mono amp power a single sub for best results. But people do use it to power 2 10 inch subs as well.
