Cymbals are extra and are not included in the "pieces" of a drumet, as only the actually drums are counted. A drumset with three toms, a snare drum, a bass drums, hi-hat, crash, ride and splash is a five piece drum set because it has three toms, one bass and on snare. 3+1+1=5. if you took the same drumset and added one bass, two toms, two crashes and a splash, it would still only be an eight piece set. 5 (toms) + 2 (basses) +1 (snare) = eight (drums).I'm not sure if this answers your question or not, but I hope it sets you in the right direction.

The concept of drums are almost as old as mankind. Some say that the first way of communication was through drumming, the same way we speak and write. As we know, there are many hand drums that originated from many different cultures, like first nation's tribes, African tribes, people from India all sorts of places. So no one really knows how far they date back, but we do know when the drum kit was invented. Marching bands and symphony's were always great to listen to, but they had multiple percussionists, snare drummers, bass drummers, people who played the cymbals (crash cymbals, suspended cymbal), people who played timpani and in some cases, people played congas and bongos. But the point is, there was a lot of people, and this wasn't good for people who played in bands, like jazz musicians and so on. They needed something smaller, something that they could take around with them, something that didn't involve many different people. So they started grouping together different sized and shaped drums. Timpani was replaced by the Chinese tom-toms and floor tom, the bass drum was set on the floor and a kick pedal was introduced, the snare was hit sitting down, slightly replacing the snare, the high-hats were introduced, and multiple cymbals were placed conveniently around the set. The first ever drum kit was introduced by William Ludwig who invented the spring loaded bass drum pedal in 1909 therefore creating the drum set. You may know his name because the brand of drums "Ludwig" is still manufactured today in memory of William Ludwig who started the company. Hope this helps :)
