The guitar changes sound with your fingers. The fingers of the right hand (on a right handed guitar) push down at various places on different strings, effectively shortening the string and making the pitch higher.

The actual sound of a guitar can be changed by using different strings or tuning them differently. Or using a pick instead of fingers. For an Electric Guitar, the sound can be distorted in many ways like using an amp or a pedal. Changing the pickups also changes the sound.

Other ways you can change the sound of a guitar electric or acoustic are to hit the strings with something like a chopstick or thread a strip of paper between the strings then play with a pick or finger as you normally would. Stiffer paper gives a different sound

Selection of wood (type, cutting, drying, age, etc.) has an important role in the process of making classical Guitars. Top of the guitar (soundboard) is usually selected from two major types: spruce (takes longer to fully open in sound so it gets better with age, but has a very focused sound and the broadest sound palette - tends to sound "brighter"), and cedar (has a little "darker"Â or "warmer"Â sound and opens up right from the beginning). Sides and back are usually made from one of the kinds of rosewood (Brazilian, Amazon, Madagascar, etc.) or even maple. Mixing different types of wood for the soundboard, back, and sides determines the tonal color of the instrument, and contributes to all the other characteristics of that instrument: volume, sustain, resonance, etc.
