It is because the inventions or the theories formulated by Isaac Newton is more of real life things which could be more or less be seen and is of common sense. The physics of this real objects is known as classical mechanics. Mostly classical mechanics is enriched with Newtonian laws , Hamiltonians and Lagrangian approach. In 1905 three papers were published by Einstein which led to a hell of new discoveries and the discoveries and theories followed is under the branch of modern Physics. It was something new and which people could not digest much (Relativity for eg). Newton was the inventer of the calculus (Leibnitz also invented it independently) and it is an essential mathematical tool in all the sciences, including Einstein's relativity.

One could argue that one or more Greeks in the golden age should hold the title, but many of their works did not survive. Isaac newton seem to be the heir apparent. More than anything else, his books, "Principia" and "Optiks" solidified his position. Any student is invited to read "Principia" and will find an amazing and brilliant mind wrote it--and you will understand why Newton is held in such high regard.

Note: this is just a generalization, I am neither a physicist or a historian, but I am familiar with both...

Newton made numerous discoveries and developed many techniques in terms of "classical" physics. He made numerous contributions to the field of mechanics be relating velocity, position and acceleration together with calculus. The laws now referred to as Newton's Laws of Motion provided the ground for the development of most later physics. He made numerous numerous developments in terms of mechanics, optics and astronomy.

The problem is, that under certain circumstances, Newton's laws don't work. Particularly, when dealing with very very fast motion, or very very small particles, they couldn't explain certain phenomena.

Einstein developed modern physics by questioning and rebuking some of the basic assumptions that had been held before. Physicists couldn't figure out why light emitted from a moving source travels at the same speed as light emitted from a stationary source. Einstein answered this with the idea of Special Relativity, where the speed of light is constant in all frames of reference. Under his theory, because of the constant speed of light, if a frame of reference is moving fast relative to another frame, then time in the faster frame moves slower relative to the other frame. This is so small that is cannot be noticed unless you travel near the speed of light.

He later developed the ideas of General relativity, which expand the ideas of special relativity into accelerating frames of reference and relate them to gravity. Previously, it was though that space was always completely linear, but Einstein used the idea of curved space to explain the phenomenon of gravity.

Finally, Einstein discovered and explained the photoelectric effect, where light emitted from a source onto metal displaced electrons, but did so based only on the wavelength, not intensity of light. He proposed the idea of a quantum of energy, ie a small, indivisible bundle of energy called a photon, that acts as a particle for light. This idea of a quantum led to the development of quantum physics, which is the foundation of almost all research being done today.

Newton was known as a natural philosopher during his life but his theories of motion, gravity, light, etc formed the cornerstone of what would become known as physics. He probably contributed more to the science than any single person before or after him.

Albert Einstein was one of a group of physicists in the early part of the 20th century who started to form new and more complex theories that extended the work of Newton to new situations. Einstein's most famous work on relativity extended the work of Newton to include very high velocities (approaching the speed of light) and the effect of mass on space. Einstein was not alone in extending the boundaries of physics at this time, a good claim could probably be made for a number of contributors to quantum mechanics who lived at the same time to share the title of "Father of modern Physics" but Einstein has for a number of reasons, not least the quality and complexity of his work gained the title "Father of Modern Physics" at least in the popular media.
