If your text messages are being synced on your iPad when you type them on your iPhone, you're probably using iCloud. Go into settings and disable iCloud for any apps you don't want synced between your devices.

It completely depends on what you want. If your looking to get a new phone then go with the iPhone 4 but, if your not specifically in the market for a phone then it really comes down to iTouch or iPad. If you don't mind spending $499 or more then go with the iPad trust me you'll love it but, if your on a tighter budget or would rather have a more portable device then go with the iTouch.
